Luckybustert's Tomato Basil Soup
Ingredients:
2 cans diced tomato – puree in blender with juice from can
1 can tomato sauce
32 oz container chicken broth
1 stick butter
1 TBSP dried basil
1 cup evaporated milk or cream
1/4 tsp salt
1/4 tsp pepper
Directions:
Puree diced tomatoes in blender or food processor with juice from can. Place in pan with tomato sauce and 32 oz. container chicken broth, and simmer for 30 minutes.
Add 1 stick of butter, 1 tablespoon dried basil, 1 cup evaporated milk or cream, and ¼ tsp salt and ¼ tsp pepper. Stir over low heat.
Serve and enjoy!

Quick question though - what is the purpose of the stick of butter?

Sounds good LB. Might have to give it a try.
I have some tomatoes from my garden to use up........may try it that way.

Well...I'm all for adding tasty fat to foods - though I really shouldn't. I was wondering if it helped with the cooking process or taste. I'm all about the satiety from soup. I'd be guilty of tossing in leftover rice and diced up cube cheese to let it become ooey gooey. YUM!!
I can't wait to try this next week!
