Non-dairy Creamy Cauliflower Soup (Veg*n Friendly)
I love this soup.
1 tbsp butter, oil, etc. I use either coconut oil, clarified butter, or chicken fat
1/4 onion, chopped
1 clove garlic, minced
1/4 cup chopped red bell pepper
a few baby carrots, chopped
about 1 cup stock - I usually use veggie or chicken. Water will work, too.
about 1/3 head cauliflower, cut into flowerettes. You can use the core!
1 tsp Vegeta or other seasoning - S, P, etc. The Vegeta tastes like Lipton's chicken noodle soup "powder".
- Heat oil in a saucepan.
- Sautee veggies for a minute or two.
- Add stock or water and cauliflower, bring to a simmer
- cover and cook for 15-20 min or until cauliflower is soft
- puree with a stick blender. Try fruitlessly not to burn yourself.
- add more water or stock to thin.
- optional: add some cream.
Quick and easy. Serves two.

Sounds delicious! Maybe you should suit up (silicone wet suit) before you flick the blender switch on, lol.
