Quick and easy Bacon and Bean Soup
A couple days ago I came home late and really didn't want to cook supper. I made this soup and boy was it quick to through together. We were sitting down to dinner 30 minutes after I arrived home. My family gave this a two thumps up.
Bacon and Bean Soup (Company's Coming Soup and Sandwiches cookbook)
3 bacon slices, cut up small (I didn't have this so I just omitted)
1/2 cup finely chopped onions
1 cup boiling water
1 chicken bouillon cube
1 - 14 oz can of beans in tomato sauce (pork n beans)
1/2 tsp dry celery flakes (I didn't have this so I chopped up some celery and fried it with the onions)
Combine bacon with onions in large saucepan. Fry slowly until onion is clear and soft. (I added the chopped celery too)
Add water and chicken cube. Stir until dissolved.
Stir in beans and celery flakes. Simmer gently, covered, for about 15 minutes. This is quite a thick soup so more water may be added at this point if desired. Makes 3 cups.
I doubled this recipe for my family of 5 and we had toasted bagels with it
