Default I need a yummy black bean soup recipe

UGH! My dh is so picky so it's really hard to cook sometimes. I need a recipe that doesn't have bell peppers, onions, or pork and does have a little zip. I am sooo craving bbs, but I can't find a decent recipe and you just never know what you're going to find online, lol. Anybody have a good one?

It can't have onions or peppers in it? The one we make has onions and peppers but no pork.

My recipe uses onions, green peppers and pork. But I once had some good black beans in a vegetarian restaurant. They cooked the black beans and finely diced red tomatoes on top. It was very colorful and tasty.

You can often sneak in healthy ingredients and if dh and kids don't know it, they will think it is great.

I don't have a real recipe, I just put a bag of black beans in the crockpot with one cup less than the recommended amount of water written on the bag. I then chop garlic, onions and green pepper, and add a few slices of diced bacon or chopped ham and salt and pepper to taste. I serve this over rice and top with chopped diced fresh tomatoes.

You don't soak the beans overnight first?

I love a little lemon or lime juice and some cilantro in my black beans! Of course, I also add onion and garlic. Maybe you could cook yours in a flavorful beef or chicken broth and season with salt, pepper and any other seasoning your DH doesn't object to. Salad dressings make good seasonings too. I bet Italian dressing would be good added in while your beans were cooking. Good Luck!

Thanks for the suggestion Lea. I'll have to try that.

I just use the one on the Flylady website. My hubby likes it and asked me to make it again. It has black beans, celery, and rice as well as some spices. Hubby wants me to add a bit of corn as well.

Kimberly, can you use onion and garlic powder to fool your hubby? I've done it before and it works.

My DH doesn't eat onions or peppers, either. If I make something that I think needs them for flavor, I cut them up really large so that they're easy to pick out, but still provide flavor.
