    Thumbs up Delicious Baked Potato Soup

    I found the recipe on Allrecipes.com a while back and it has became a family favorite. It is quick and easy and so filling on cool night. I usually toss my potatoes in the crockpot wrapped in foil in the morning and by evening when I am ready to make my soup they are cooked and ready to be cubed and added to the soup. I save a little of the bacon and garnish my bowls with it, along with some cheese and a dollop of sour cream.

    Baked Potato Soup

    Prep Time: 15 Minutes
    Cook Time: 25 Minutes
    Ready In: 40 Minutes
    Yields: 6 servings

    INGREDIENTS:
    12 slices bacon
    2/3 cup margarine
    2/3 cup all-purpose flour
    7 cups milk
    4 large baked potatoes, peeled and cubed
    4 green onions, chopped
    1 1/4 cups shredded Cheddar cheese
    1 cup sour cream
    1 teaspoon salt
    1 teaspoon ground black pepper

    DIRECTIONS
    1. Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
    2. In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently
    3. Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

    That sounds yummy. I tried to make potato soup once and it was soooo disgusting. I think I used the wrong kind of potatoes. They stayed hardish and I thought potatoes kinda broke down in the soup a bit and thinckened it it some. Mine didn't. It was gray water with white chunks floating in it. blah

    Beverly, just buy regular baking potatoes for this and they will work great. They are usually sold in bin and priced as baking potatoes. You can also buy russets and they will work fine. I use russets as my "do all" potatoes, I mash them and fry them and use them in casseroles. I don't like a super starchy potato and these are not extremely starchy like a red potato or a new potato tends to be.

    I think I used the golden potatoes with the thin peel. yuck. I usually don't buy them, I get the russets. They must have been on sale or something. It could also be that I just don't have luck with soups. No matter what I do, they seem bland.

    Smile Potato Soup

    My family loves potatoe soup. I make a very simple version. I melt about 1/4 a stick a butter in a soup pot. Then I add a onion diced, just cook till soft. Then add raw, peeled, cubed potatoes. Then just cover them with water. I add salt and pepper to our taste. Cook till very soft. Then just add milk, if it isn't thick enough you can mash some of the potatoes. We like to add chives (dryed) if we have them on hand.(note I usally cook at least one potatoe per person and a couple extra.ENJOY! Tina

    its cold here today and ive never had potato soup. this sounds yummy so im bumping it up.

    I've made this same recipe before and we love it, but DUH, I never thought to use my crockpot to bake the potatoes! Sure beats heating up the big oven and wasting all that electricity. Thanks!

    Oh my goodness, this sounds wonderful. I'm going to try it when the weather cools down again. Right now we are having a stretch of temps in the high 70s.

    this weather is just crazy! we went from 77 on friday to 41 on saturday. ill be glad when it starts acting like december and stays that way.

    I use chicken broth for the water in my potato soup.

    It makes it taste richer and yummier.
