    I am in PA but I am totally wanting some cornbread and collard greens! Gonna visit a friend in KY in May 2007 and she said she's making me some!

    Daughter, SIL, and my three grandbabies came Thursday evening to spend the weekend with us and we ate ourselves silly, LOL. Thursday night we all went out to eat at a local restaurant in Darien called B.J.'s. For $16, you get the all you can eat buffet which includes Jumbo fried shrimp, boiled shrimp, fried catfish, fried oysters, crab casserole, steak, pizza, mac & cheese, mashed potatoes & gravy, collard greens, lima beans, rice, salad, corn bread, yeast rolls, biscuits, sweet tea or soft drink. For $20 you can get all of the above plus they bring you a big bucket of Alaska King crab legs.

    Friday morning I made grits, bacon, eggs & cinnamon pancakes for a late breakfast since we all slept in a little for a change. Whew, It was nice, LOL.

    Friday night we had a low country boil here at home with shrimp from our freezer, sausage, potatoes and corn on the cob along with a few steaks that Arlie grilled.


    Saturday was the first day of gun season here and we are lucky enough to hunt here behind the house. Arlie and Fred both got their first deer of the season within 15 minutes of each other, so Saturday night I fried up some deer steaks and made mashed potatoes, gravy, and biscuits we still had the shrimp from Fridays low country boil. I still have shrimp left over, so today I will make shrimp salad to go with tonights supper.

    Sunday morning, I fried up some more deer meat w/grits, eggs and biscuits with homemade syrup.

    Sunday dinner consisted of leftovers from Saturday night, and I sent Jennifer home with food for their supper.

    Oh, and in between, we snacked on boiled peanuts that Arlie boiled Wednesday in the back yard, LOL. He boiled a bushel, and I put them up in freezer bags. The kids love them!

    3 of my favorite meals are
    1. Pintobeans, Fried taters, cornbread, and peach cobbler
    2. Countryfried steak, mashed potatoes, squash patties, biscuits, and apple pie with ice cream.
    3. Pork bbq, fries, squash puppies, and a coke chocolate sheetcake.

    Also I love skillet corn over biscuits.

    LOL, I see you love squash too. My, my, I could eat squash and sweet taters every day! How do you make your squash patties? I usually just slice my squash, dredge it in seasoned flour, and fry it.

    #1 - shrimp po boys and a cup of gumbo
    #2 - Fried chicken, fried green tomatoes, mashed potatoes with gravy
    #3 - cheese grits or grits with red-eye gravy

    lol- I am going home to Biloxi Mississippi for Thanksgiving. I need to stock up on a few things I can't get here in Kansas City. My sister has been sending me "care packages" with Community Coffee and large bags of grits (they sell instant in some stores- not the same to us) along with some essential spices (gumbo file for one). The plan is to totally pack out the trunk of the car (crown vic) so I can make it to our next visit in the summer.

    When I make squash patties I grate my squash, about 1 1/2 cups and then add about a cup of cornmeal and 1/2 cup self rising flour. Then I add shredded cheddar cheese and 1 egg and about 1/4 cup veg oil . I mix all this together and then fry it up in patties. You have to fry it a little slower so that it gets done all the way thru without burning.
    These are my favorite.

    I also just fry my squash like you do above and make squash cassarole. The funny thing is until about 3 years ago I hated squash. Now I could eat it almost every day.

    Jeanna,

    Thanks for recipe for squash patties. YUM! Will try it next summer when our squash come in. I have squash in my freezer now for casseroles this winter, but it's hard to find good fresh squash in the stores here now.

    Collard greens, sweet potatoes and cracklin cornbread. Good anytime, but especially in the winter!

    Favorites are-
    Sweet Tea( with everything 24-7)
    Country Fried Steak
    Biscuits and Gravy
    Chocolate Gravy
    Sweet Potatoe Pie or Casserole
    Grits of any kind- eat them w/ just about every meal
    Fried everything!!
    Gumbo
    Conbread( I eat this with everything)
    Greens
    Pecan Pie
    Red Velevet Cake
    There are just so many. I basically only eat southern food. Best out there so why try any others lol.

    Pork chops with red-eye gravy corn bread and beans, navy bean and ham hock soup, biscuits and gravy, REAL grits with cheese, sweet tea, pulled pork sandwiches, shrimp and grits, fried chicken with mac and cheese, potato salad, sweet potato pie...
