Tortilla-Bean Casserole
Tortilla-Bean Casserole
Recipe DescriptionA casserole of beans or beans and chicken in a mexican-esque sauce.Preparation Steps:preheat oven to 350 F.Level of Difficulty:EasyTime Needed:15 minutes to make, 30 to bake.Ingredients:1 T oilServes:
1 onion, chopped
2 cloves garlic, minced
2 T cumin
2 (14 oz) cans of chopped tomatoes
2 cans of kidney or black beans, drained and rinsed OR 1 can of beans and 1 1/2 c chicken, chopped.
3/4 c salsa
6-8 flour tortillas
2 c shredded cheese (cheddar, mont jack, etc)
taco style trimmings of your choice8Directions:In a large saucepan, onions in oil until translucent. Add garlic and cook for about a minute. Add cumin, tomatoes, salsa, beans (and chicken if applicable). Bring to boil and simmer for a few minutes to meld the flavors. Adjust the seasoning to your taste.
In a 9x13" pan, place 1/3 of bean mixture and cover with half of the tortillas. Cover the tortillas with another 1/3 of the bean mixture and top with half of the cheese. Cover the cheese with the rest of the tortillas. Top with the remaining bean mixture. Bake in oven until piping hot (about 30 minutes). Remove from oven and top with the remaining cheese. Serve with taco-style fixings (sour cream, cilantro, limes, whatever you prefer).

Thanks ladies. It's a really forgiving recipe, just taste it and adjust the seasonings for your taste and throw it together.

This sounds fantastic either with the chicken or not. Hhhhmmmm...bet it would be really good with browned ground meat also.
