Stuffed Jalapenos and Meat Loaf
Recipe DescriptionSo much food so cheap. I got the cheese on sale. It was the most expensive item. I ate some of the peppers for dinner and froze the meatloaf.Preparation Steps:Level of Difficulty:EasyTime Needed:Ingredients:6 Jalapeno PeppersServes:Directions:
1/2 Lb. Monterey Jack Cheese grated
1 Lb. Hot Pork Sausage, divided
½ Cup Bisquick
Black Pepper
1 EggSplit peppers. Remove seeds. Stuff inside of pepper with Monterey Jack cheese. Combine cheese, pepper, ½ Lb. sausage, and Bisquick. It won’t mix well. Tear sausage up into small pieces as you go. You’ll end up with sausage bits mixed with Bisquick mixture with a lot of mixture left over. Save the extra mixture for the meatloaf. Wrap dough around top of pepper. Bake at 300 degrees for 30 minutes.
Add 1 slightly beaten egg to leftover bisquick/cheese mix. Add ½ Lb. sausage. Mix to form meat loaf. Cook in 300 degree oven for 30 minutes.
