    Ramen Stir Fry

    Recipe Description
    There isn't an exact science to this and you can easily adapt the recipe to your tastes and according to what ingredients you have on hand. I often use a frozen precooked chicken breast, thawed and chopped, for the meat but I also enjoy this dish without meat. Makes a very quick go-to dinner.
    Preparation Steps:Level of Difficulty:
    Time Needed:Ingredients:
    1 pkg Ramen Noodles (flavor of choice)
    1 cup frozen mixed veggies, peas or peas and carrots, thawed
    2+ Tbs butter or margarine
    1/2 cup cooked meat, chicken, shrimp, pork (optional)
    1-2 dashes soy sauce and/or teriyaki sauce (to taste)
    1 egg, beaten
    Cook noodles (do not add seasoning packet. I microwave my noodles). Drain excess water. Meanwhile, melt margarine in skillet. Add veggies and meat (if using), seasoning packet (from Ramen) and soy and teriyaki sauce and heat till heated through. Add ramen and stir to coat and combine. Make a well in center of skillet and add egg. Let cook to set a few minutes and then stir and cook till egg is fully cooked. Serve and enjoy. Makes 1 very large portion or can serve 2 generous portions.

    I love this recipe but it almost made me laugh - found out that I'd ran out of ramen this weekend and haven't replaced it yet. Of all the basics to keep in the house . . . .

    I used to do this too, until my wife found out about her Celiac. We would typically use half the powder packet.
