Penne With Cannellini Beans
8 ounces dry penne pasta
2 cans of italian style tomatoes (diced tomatoes with a little italian seasoning)
1 can cannellini beans
1 package (10 oz) spinach, chopped
1/2 cup shredded parmesan and/or romano cheese
Cook pasta. In a large saucepan, combine tomatoes with liquid and beans. Bring to a boil, then reduce heat and simmer for 10 minutes. Add spinach and cook 2 more minutes, until spinach is wilted. Serve pasta topped with tomato mixture and sprinkle with cheese.
Makes 5 servings.
315 calories, 54g carbs, 15g protein, 4g fat

yum. i make this also but i do add some white wine (you can certainly use pasta water or chix broth) as the beans and pasta suck up the sauce and it becomes quite dry...otherwise, we love this! i also do it with chick peas...super yummy! i do also sautee an onion and some crshd red ppr and lots of garlic to add to it....and, sometimes we do it w/ whole wheat pasta to make it more nutritous!
