Potato Cakes -- Leftover mashed potatoes --simple recipe
When I was a child my grandmother used to make potato cakes out of the leftover mashed potatoes. Since then I have added a lot of variants to this recipe
Basic Potato Cakes
Leftover mashed potatoes
Flour (dependent on your amount of potatoes)
1-2 eggs (dependent on your amount of potatoes)
Pam equivalent
Salt and pepper (optional)
the egg will make your mash potatoes thinner, add flour to thicken them back up.
Spray your skillet (I use non stick) with pam and cook like a pancake.
variations:
Baked potato cake:
add the things you like on your baked potato into the basic mixture... shredded Cheese, sour cream, chives, bacon bits, etc... then cook
Casserole cakes:
add cooked ground beef, shredded cheese and frozen corn.... then cook
other things you can add are
onions
bell peppers
finely diced ham
ranch seasoning mx
actually the possibilities are only based on your tastes

We do similar with leftover mashed taters. I microwave for a min or two to heat them up and help them loosen up, add a splash of milk or broth so its soft/mashable and add in 'extras' (bacon crumbles, shredded cheese, diced green onions, spices and/or fresh herbs etc). I heat the skillet and slap a healthy spoon of margarine into it and then drop the tater mixture by the spoonful and press down. Let sit on med heat so it can get a crispy skin before flipping. Serve with a sour cream based dip
We usually serve them up with eggs & fruit on a weekend for a nice big brunch

I make these anytime I have mashed potatoes left..I serve them many times as a side dish..If I make them for breakfast I put syrup on them and lots of butter...lol
