What's for dinner, Thursday, January 21st, 2016?

We are having a leftover buffet, we'll pick and choose from lentil-veggie soup, rice and beans, roasted and raw cut veggies, plain quinoa and bread.

Food prices are a really great motivation to not waste anything and eat leftovers. Plus, NO COOKING! woot!

~Thursday is Leftover or Whatever Buffet here too. I cook on M-T-W nights, Th is night off, and DH cooks F-S-Sn.

Tonight we have a choice of kale/quinoa/lentil tacos, chick-fil-a copycat nuggets, swiss gratin potatoes, and spicy black bean veg soup. I can pull out a loaf of homemade bread from the freezer if needed.~

Leftover tofu chili with rice.

Homemade veggie soup with mexi seasonings, leftover quinoa and white beans added....chicken in hubby's and tofu in mine. Topped with the end of the bag crushed tortilla chips and pepper jack, olives and green onions on hubby's.
