    Default Whats for dinner tonight?

    I am stuck for an idea for dinner tonight and thru the weekend!!! I hate weekend cooking-- too much to do and not enough time. I try to catch up on all the laundry and housework on the weekends while I am off work - and then there is the running around with the kids and grocery shopping to do. I just dont feel like cooking!
    Anyone have any suggestions for quick easy dinner ideas to get me thru the weekend?

    We did a pasta and veggie stir fry tonight--using up some fresh veggies, tomm. will be chicken thighs, potatoes and veggies all baked together-put it in and forget about it.

    I made roasted radicchio, broccoli, red onions, garlic, chickpeas, and pine nuts with a lemon /olive oil drizzled on top.

    Leftover cabbage soup. I'm about to hit a ten-pound loss and want to hurry that along.

    Sounds weird but I have never actually made pot roast. So tonight is pot roast made with a large piece of bottom round. I find cuts of beef and pork confusing and usually don't venture away from what I know to do. Hope it turns out well. Usually I make beef burgundy by cutting up a round roast. It's a lot of work though. This could be a time-saver and I want to make sandwiches this week.

    I got a frozen duck. Hubby is in charge of that next week end. He is always wanting something different so duck will be it.

    DH got a huge jar of 505 green chile sauce and put it in the crock with a chicken. He got take & bake bread to heat up too.

    Chicken lettuce cups, with vegetable dumplings, and maybe a cucumber salad.

    I make a big batch of the chicken mixture https://www.epicurious.com/recipes/f...ce-cups-369491, using all kinds of vegetables, carrot, celery, green onion, sweet potato, peppers, whatever I have on hand and freeze it in portions.

    I get the potstickers at the asian grocery and just warm them in a little oil.

    I often add plain steamed rice to the meal, but not tonight. We have some fresh cut fruit for dessert.
