    Default Whats for dinner tonight? 7/6

    Kids will be gone for dinner so I will eat some leftovers. Boring but needs to be done.

    Porkchop, potatoes, garlic bread, salad.

    Really looking forward to dinner. I'm searching for a really nice recipe using the first of the broccoli from this years garden. I'm thinking broccoli & basil with some roasted red peppers in a light cream sauce over pasta. Oh my.
    Having a salad from the garden also.

    We are leaving for vacation on Monday so I want to use up stuff that is here. I have some homemade hamburger buns that need used up and some browned ground beef. I think I will take out 1 lb of ground turkey and add it to the ground beef and make sloppy joes tonight. Also have some salad and fruit to eat up.
    Since it will be 95+ degrees here I think this is my plan as I do not want to heat up the house.

    I think this...

    Chicken with Rosemary Roasted Vegetables Servings: 4

    2 tablespoons olive oil
    2 tablespoons balsamic vinegar
    1 teaspoon salt
    1/2 teaspoon pepper
    1/2 teaspoon dried crumble rosemary
    1 whole chicken (about 3 1/2 pounds), cut into 8 pieces (I actually use a few boneless, skinless breasts instead)
    1 cup small cauliflower florets
    1 cup small broccoli florets
    1 small red bell pepper, cut in 2 pieces
    Heat oven to 400 F. In a large bowl, combine olive oil, vinegar, salt, pepper, rosemary, and sugar substitute. Add chicken and vegetables. Toss until well coated. Arrange chicken, skin side up in a jelly roll pan. Place vegetables, in a single layer, around chicken. Roast 40 minutes, until chicken is cooked through and browned. Halfway through cooking time, flip vegetables over with a spatula.

    I add a whole lot more vegetables because I don't eat the meat

    "Plannedovers" from Fourth of July: grilled pork chops, grilled veggies, mashed potatoes. I don't think we had as much leftover as I had planned, so I think I'll nuke some frozen veggies to stretch it.

    I don't have anything planned. But I really feel like having pasta. Maybe I'll throw those meatballs in the crockpot with some sauce.
