Would anyone be interested in a canning challenge for 2017? It can be totally up to any individual what they want to do. But basically you'd be committing to canning 12 different things in 2017. For a monthly challenge, here's my thoughts. You can substitute your own if you prefer. Jan...

Why does some jelly recipes say to be processed in a water bath canner and some don't, even for the same fruit?

I just saw a Youtube video that mentioned a question of safety for pressure canning on a glass stovetop. The lady said she'd never experienced a problem, but it put a worry in my head. Is it safe or not to can on my glasstop stove? We're not happy with this oven, but the cooktop has not been an...

A week or so ago, someone posted in a thread about canning dry beans by just putting them in the jars with water and processing them. There was no pre-cooking involved, and the person who posted about that method also posted pictures. And now, of course, I can't find it! I don't think it was...

Does cold pack mean that I am NOT going to heat the ingredients before packing them in a jar to process? Meaning, are the ingredients raw? Here is a recipe for salsa. It says cold pack. Does that mean raw? And can this be done in a pressure canner instead? SALSA FOR CANNING 25 or 26 lbs...

I have decided I want to try my hand a canning this year, but am totally confused. I have looked for a canning class in my area and have not seen one listed. So, here are a few of my questions.....what do you use a pressure canner for, what about the hot water canning method? What is the best...

Beans are a cheap thing to practice on for new canners (pintos were actually the first thing I canned). They are also a great time saver because you can get a lot cooked and stored rather than soaking a small batch of dry beans each night before you want to use them and waiting an hour for it...

I am trying to motivate myself into canning more often. Yesterday I canned 8 pints carrots, 6 pints cabbage, and 4 pints of kidney beans. The day before I canned 16 pints of carrots. Today's plan is to can some quarts of cabbage. I picked up 4 plastic bags @ $ 1 each, of marked down...

So. We have an apple tree that produced a lot of apples this year, after nothing last year. The apples are kind of small and tart, but not crab apples. We've also had a bumper crop of rhubarb - have harvested it three times this year already and on Saturday we harvested about another 26 cups...

I'm using a recipe for microwave bread and butter pickles that makes one jar at a time. I'm using canning jars, new flat lids, old rings. The recipe says to keep pickles in the refrigerator. That doesn't seem necessary to me since there is vinegar, and jars are sealed tightly with new lids...
