“Protein-Packed” Breakfast Waffles

1 cup flour
3/4 cup wheat flour
1/4 cup wheat germ
1/4 cup sugar
2 eggs
1 1/2 cups skim milk
1 tsp. vanilla
1 TBSP baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 cup white bean puree*
1/4 cup oil
Mix well and cook on hot waffle iron. Serve with your favorite waffle toppings.

*In a blender or food processor, puree white beans with a few TBSP water until smooth.

That's interesting with the beans in it. I bet it taste pretty good. When I was a child my mom never sent me out the door without eating some wheat germ. :)
