First week of November:

-- pigs in blankets, spinach salad
-- chicken, corn, spinach
-- tacos, spanish rice
-- pasta, vegetable
-- chicken thighs, curry vegs over rice
-- fish, sweet potato fries
-- chicken, veg?

I found lots of short-sale markdowns at the grocery store this week:

brisket: $1.49/lb (6+ pounds)
Bacon Cheddar Beef Patties ($3 for 21 oz) I bought 3 packs, 12 burgers.
spicy Italian sausages (2 lbs for $3)


I have the brisket roasting in the oven, and I grilled all the burgers and sausages.

So, the menu:
Nov 1 - burgers, chopped salad
2 - lasagna, salad (using prev purchased ground beef)
3 - hot brisket sandwiches, salad, crudités
4 - fried rice, w/ peas & carrots
5 - lentil/sausage stew
6 - fish from freezer, rice, frozen veg
7 - leftovers/freezer challenge

Although I'm pulling fish out of the freezer, a bunch of the burgers, brisket, and sausage will go back in.

Early Bird- What bargains you found!

I purchased 5-6 lb of chicken breast so I must come up with dinner ideas! My tentative menu for the week-
- Beef enchilada casserole
- BLT's
- Breaded chicken and flavored rice
- Oven roasted chicken with mashed potatoes and mushroom gravy
- Baked Chicken Cordon Bleu (from recipetineats)

Looking like our weather will be cold this week:

-- baked chicken, brussels sprouts, tomato salad
-- bbq beef, corn, baked beans
-- wild rice soup, rolls
-- chicken, dumplings, edamame
-- red beans and rice, corn bread, kale salad
-- turkey, potatoes, baked squash
-- thai pork meatball rice bowl

I picked up an apple pie at the grocery, we'll have sometime this week.

Made most of those dinners last week. Have some leftover mashed potatoes/gravy.

This week will be:
- baked chicken quarters w/ salsa cornbread
- elbow noodles in a meat sauce w/ herb focaccia bread
- breaded chicken w/onion rings
- Olive Garden (mama needs a break)
- shrimp fried rice 1 (allrecipes)
- blt's

Found a recipe for tuna/corn/cheese chowder. This will use up 2 frozen tuna burgers that hubby won't eat. Told him the plan and got the usual response "ewwww". Said I am making it anyway, you are welcome to eat leftovers.

Looked through the fridge and:

-- pork meatballs or beef lumpia, rice, vegetables
-- chicken, sweet potatoes, cauliflower
-- soup, spinach salad with beets or canned mandarins
-- bbq pork shoulder, swiss chard, potatoes or fries
-- pork chops, stuffing, corn
-- mexican take-out
-- tuna rice bowl, vegs, spring rolls

We have a lot going on this week, so I'll try to make things a bit easier by having easy and quick meals.

Sunday- smoked pork, baked potatoes, spinach
Monday- leftovers
Tuesday- meatball sandwiches
Wednesday- Olive Garden takeout using GC
Thursday- Breaded chicken, flavored rice, mix veg
Friday- Skillet chicken w/ peppers/onions and cornbread

I have no idea whether the translator will translate the dishes into understandable English.

Mon, 9th Nov: Carrot soup with minced meatballs and chocolate pudding
Tue, Nov 10: Fried potatoes with fried egg and pickles
Wed 11 Nov: Kaiserschmarren with plum compote
Thu, Nov 12: Spaghetti with wild garlic pesto baked apple
Fri, Nov 13: potato pancakes with quince sauce
Sa, Nov 14: mashed potatoes with meat cheese and fried onions
Sun, Nov 15th: grilled sausage, potatoes and tomato salad

Mon, Nov 16: tomato soup, semolina pudding rolls with fruit
Tue, Nov 17th: Apple and mushroom pan with mashed potatoes and celery
Wed, Nov 18: rice casserole with apples, raisins and hazelnuts
Thu, Nov 19: mashed potatoes with duck, apple, carrot and lemon raw food
Fri, Nov 20: Noodles with creamed spinach and cream cheese sauce and tomatoes
Sat, Nov 21: turnip soup
Sun, Nov 22: Pizza

The dish actually comes from Austria. But it is also popular in southern Germany. :)

Menu plan went sideways last week, so some things got bumped:

-- bbq pork shoulder, corn
-- chicken, green bean casserole
-- tuna rice bowl, vegs, spring rolls
-- mac&cheese, spinach
-- turkey, etc.
-- leftovers
-- chili

I had not heard of Kaiserschmarrn before, but it sounds decadent. :)

Wed, Dec 02 Dumpling roulade with mushroom filling, cream sauce, salad
Thu, Dec 3rd, roasted trout with caramelized carrots, jacket potatoes and herb butter
Fri, Dec 4th, breaded sausage slice with noodles and tomato sauce, chicory and orange salad
Sat, Dec 5th Cream of pea soup with sour cream
Sun, December 6th Schnitzel with mushroom sauce "retro vegetables" and baked potatoes

I want to make several kinds of soup (turkey, split pea) and get them into the freezer this week. I also need to use up buttermilk, can make some biscuits and freeze un-baked. I have done this before with mixed results. It is nice to be able to bake a few on demand to add to supper.

I have a pack of ground beef and a pack of chicken thighs thawing out. I may make cookies this week.

My meal plan:

- Chicken/turkey enchiladas
- Korean beef & rice with steamed carrots
- Rosemary lemon chicken thighs with buttered egg noodles and spinach
- Ramen noodle dish (made by DS2)
- Oven fried battered chicken with onion rings
- Sausage sandwiches

I got big packs of chicken and will try to figure out new recipes. So far, it's looking like the following are on the menu:

- Lemon chicken (by Ina Garten on food network)& hatch chile fettucine
- Breaded chicken & rice pilaf
- Chicken noodle soup & crackers
- Shrimp and Scallop Scampi with Bucatini pasta (by Food network)
- Orange chicken kiev ( from Taste of home) with potatoes and asparagus
