First full week of January:

-- chicken piccata, veg
-- l/o bbq, beans, corn

A New Year for a new me with some new recipes.... Let's see what we can make!

- Fried cod with oven fries
- Chicken enchiladas
- Rotini in a meat sauce
- Easy delicious chicken rice casserole (Allrecipes- layering long grain rice, can cream of chicken, water, pkg of onion soup mix and baking 90 min covered)
- Ham, eggs & noodles skillet

At the end of October I decided to only go shopping once a month. I did that many years ago. But then I had different reasons for it than now. Now I don't want to come into contact with other people so often because of Covid.
If I only want to go shopping once a month, you have to plan exactly what I want to eat and cook. That's why I'm now making a monthly meal plan. That worked out very well in November and December.

I have been trying to push the kids to do this task, but at some point the it takes more time nagging than it is worth.

Monday: left overs: beef stew, pizza and pasta
Tuesday: Pancakes and bacon
Wednesday: Oven baked fish and chips
Thursday: Kebab in pita
Friday: Tacos
Saturday: Porridge
Sunday: Full English breakfast

Using things from the freezer:

-- beef ramen noodle bowl with vegs
-- chicken pot pie
-- nicoise salad, onion soup
-- pork chops, sweet potatoes
-- black bean chicken, cauli rice
-- beef barley soup
-- leftovers or take-out

I'm thawing more items from the freezer (Chicken, beef, sausage, hatch chiles, baguettes and turkey meatballs) for dinners this week.
- Roast beef w/mashed potatoes, gravy, carrots
- Chicken enchiladas (using chiles, l/o tortillas, cheese)
- Baked ziti (ground beef & sausage) & baguettes
- Turkey meatball sandwiches (using l/o buns)
- l/o (more than likely we'll have enchiladas and ziti)

I may make pumpkin pie or cookies if they want it.

Tuesday: roasted veal shank (freezer)
Wednesday: Fish cakes (freezer)
Thursday: baked potatoes
Friday: chicken and rice
Saturday: fried rice (based on leftovers)

gaja I hear you was a few hours and 6 reminders to get dd to dice some potatoes for the soup for me. my meal planning is more on the fly but so far...

tomorrow ...leftovers from the week.

tonight shepherds pie
last night rotisserie chicken meal deal from store..w pasta and potato salad which probably crows will get the rest off. a chicken costs the same as buying it uncooked.
tues - cheesy potato leek and bacon soup
mon - smoked pork chops, peas and frozen mac n cheese.

Trying a couple of new things the next couple of weeks, in addition to the old staples.

Sausage pot with sour cream sauce
Burgers
Hungarian pörkölt with mashed potatoes
Cod with pasta and pesto
Pizza
Porridge
Full English breakfast

Leftovers
Sushi
Korean bulgogi with rice

I'm a little off schedule because of the MLK holiday.

Also, we are trying to clean up some of the pantry. I donated some dry goods, but the food pantries don't want anything past the best-by date. So, we're eating those down.

DH smoked a ham on Monday, instead of Sunday. And I took some grilled chicken breasts out of the freezer.

General meal plan:

Monday - casserole/freezer
Tuesday - pasta
Wednesday - crockpot/cooktop
Thursday - fish
Friday - beans
Saturday - leftovers
Sunday - roast

This week:
Monday - ham
Tuesday - chicken enchilada casserole
Wednesday - ham + bowtie pasta
Thursday - parmesan tilapia (Sam's Club, not homemade)
Friday - ham/bean soup
Saturday - leftovers
Sunday - chicken cordon blue (Sam's Club, not homemade)

I make up 3 days worth of scrambled eggs at a time; those get microwaved for DH's breakfast. I usually have leftovers for breakfast.
Lunch is mostly leftovers. But today DH got ham salad for lunch.

Saturday we went to town, and Sam's Club was so crowded that we left without buying anything. I had wanted to get a couple of rotisserie chickens, but not worth fighting the crowds.

DH smoked 2 whole chickens so I have to come up with ideas. I've been wanting more cod to fry and DH said we'll go to Costco but I'll probably have to get it from the local market.

- one pan chicken rice curry (taste of home)
- smoked ribs and cornbread
- fried cod and fries

I've been in a fried fish mood lately. I got some from the market. DH wanted enchiladas when he smoked the chickens but none was leftover. I found cooked chicken in the freezer and will use it for dinners.

I stocked up back in Oct-Nov so we are eating that as much as we can, unless someone has a craving for something different. This week reflects what we have in the freezers/cupboards..

  • breaded fish w/ spinach
  • breaded chicken w/ marinara and cornbread
  • baked ham w/potatoes
  • various canned soups w/crackers
  • crockpot beef stew
