I've taken chicken and stew out of the deep freeze to make some dinners. We have leftover ham as well. Here's my ideas:
  • Breakfast for dinner- Ham & eggs with toast
  • Chicken fajitas
  • Beef stew
  • Chicken noodle soup & crackers

I'll try a blueberry pumpkin muffin recipe and chocolate chip cookies for the family.

Staying in this week due to extreme cold. Using pantry and freezer items.

-- flat iron steak, potatoes, can green beans

Almost the end of February, wanting to clean up some leftovers.

-- leftover turkey and take-out (tacos or wraps)
-- pork chops, spinach salad w/apple, walnuts and blue cheese
-- l/o dirty rice, swiss chard

-- cube steak, fries, gravy, broccoli
-- soup, or take-out

Finishing the chicken soup. Took more chicken and a pot roast out of the freezer. DH has the smoker going.... This week will be full of cooking/smoked meals...

  • smoked beef ribs, cornbread, spinach
  • boiled eggs, toast
  • Jamaican jerk chicken tacos
  • pot roast, mashed potatoes & gravy, carrots, green beans
  • fried flounder, yellow rice

Couldn't make all of the above due to emergencies, but I think we'll eat from the freezer this week so we can clean out the appliances a bit...

  • leftover pot roast, mashed potatoes/gravy
  • chili chicken firecrackers (frozen)
  • deli sandwiches
  • breakfast burritos (frozen)
  • cheese pizza (frozen)

DH smoked a pork butt so there are leftovers. More snow on the way and comfort food is still a good idea.

after stuffing myself and throwing my salt levels off (puffy cankles...and eyes) during a post-vaccine visit to my mom, I am trying to meal plan. Also helps me with the budgeting and pantry use.

My sister encouraged me to eat fewer carbs (apparently they also create the puffiness and bloat...darn it).
SO: today: brothy veggie soup using up tomatoes, onion and romaine lettuce (almost a BLT in a soup!)
Breakfasts for the week: Eggs. Boiled, scrambled
Lunches: romaine lettuce salad with a buffalo burger
Dinners: coconut flour pancakes if I can figure out the recipe or scrambled eggs (really, the ladies are laying like BONKERS) with veggies and can of random fruit from 2nd harvest.

Maggie- I luv my carbs but I shouldn't eat many either but it sure is difficult. You reminded me that boiled eggs need to be made so I have a pot boiling now! I looked up how to boil eggs from Food Network and will try it their way.
We're expecting snow all week and I'll need some comfort food! The dinners below are planned for the next several days:
  • Chicken noodle soup
  • Wedding meatball soup
  • Caribbean jerk chicken tacos
  • Tuna sandwiches

This weekend:
egg sandwiches for breakfast with coffee.

Potato soup for late lunch with fermented rainbow carrots and maybe beans or more eggs. Been skipping supper lately and just having a big late lunch. Working better for me right now. It's too late to eat when I'm done working outside.
