The weather channel says more snow coming. Good grief.
I fried up cod today and made rice. DH smoked a pork butt and we'll have that. The next few days will be:
- shredded pork sandwiches
-mexican beef casserole
-macaroni beef

Hope the snow is not too heavy or long lasting.

We're still getting mixed weather. This week, maybe:

-- out (burgers)
-- chili dogs, potato salad
-- chicken, asparagus and tomato salad
-- tuna and rice bowl w/vegs
-- chicken sandwiches
-- out (bbq)
-- dirty rice, salad

Maggie- I hope the meals were refrigerated and didn't spoil.

We've been using lots from the freezer/pantry....This week, we'll have:
  • Korean bbq tacos
  • Breaded cod & crescent rolls & spinach
  • Smoked ribs & cornbread & pumpkin pie
  • Tikka Masala chicken over rice

DH will be smoking meats this week. He even does that for people at work and they pay him a bit for it.....OK, this week:
  • Chicken simmered in tikka masala sauce over rice
  • Smoked pork ribs, cornbread
  • Smoked chicken for sandwiches and enchiladas
  • Pasta in a mushroom meat sauce

I made this on Wednesday, easy and tasty. Recipe called for 1 lb pork cut into cubes but I used a very large 1.5 lb frozen chicken breast instead. 2 1/4 C salsa, 4 oz can green chiles. All in crock pot on low for about 6 hrs. Then I cut up the chicken breast and added 15 oz can of corn (drained) and re-heated. Served with rice and shredded cheese.

I haven't been buying much so the freezers are dwindling. Looks like I have quite a bit of blueberries/cranberries/hot peppers in there. I thought for sure the peppers would've been gone by now! After going through 2 freezers, I've come up with:
  • fried cod & spinach
  • fajita skillet (a bag of chicken,peppers,onions that will be cooked out and I'll add tortillas, salsa, cheese)
  • jerk chicken tacos ( will add toppings like fresh mango and carmelized onions)
  • leftover chicken soup, rice
  • chicken milano ( from allrecipes. Need to get sundried tomatoes for it)

I eat twice a day, but I'll only leave the lunch menu for the week. On Monday, I'm thinking to make a lasagna, on Tuesday - Caesar salad, on Wednesday-mushroom cream soup, on Thursday-homemade pizza, and on Friday-gazpacho. I went to Spain last year, and I just fell in love with their cuisine. There I met a Spaniard and asked where I could find the best recipes for Spanish dishes. He said that every chef has their own secrets, but the coolest ones are keto recipes. Now I cook something Spanish every week. For those who want to lose weight, or who have cardiovascular diseases, be sure to try the Mediterranean diet.

Jasmine I am on the Mediterranean diet and it does work. ....I like it....I feel good on it....I eat yogurt everyday for lunch and then have fish for dinner....breakfast is usually egg and half english muffin....I drink a bottle of Kivita everyday....

Years ago, I was vegan and felt good and bloodwork was great. As I incorporated meat and some fried food/dairy, my bloodwork was still great. Since my meds have changed due to antibodies, my labs are bad. Dairy-free/sugarfree yogurt has my liver pumping out enzymes due to the high protein.

This week, we have turkey and ham thawing.... So, burgers and a ham dinner is planned. After that, it's ham & eggs, ham & rice and sandwiches.
