Like CH said using stuff from the pantry and freezer -

Meatloaf, mashed potatoes and corn on the cob
Chicken and dumpling casserole, green beans w / bacon
Sausage gravy and biscuit
Baked ham, Mac and cheese, veggie of some sort

Everything is from the freezer or pantry except the ham. I bought that last week for Easter.

End of April. Too tired to plan but we have chicken thighs, pork chops, canned tuna, chinese dumplings, and leftover turkey breast. Vegs include, cauliflower, lettuce, cabbage, carrots, pea pods, and we have various fruits. Eating one meal out and I expect leftovers from that.

I finished the easter ham by turning it into scalloped potatoes and ham. DH unsure if he wants ham/veg/barley soup with the bone later on..
This week, we can have raviolis (chicken or lobster), baked ziti, chicken & rice or pancakes (potato or buttermilk) for dinner. We have honeydew/pineapple/banana/strawberries for dessert. Add whip cream and a key lime cookie and it's a tropical treat.
That's all I can come up with that's quick.

The turkey area of the grocery had store made bratwurst in it this week. Noticed the price of chicken is creeping up, bought a bag of frozen pieces which should last a few weeks.

Roughly, the beginning of May looks like this:

-- chinese dumplings, veg
-- wild rice soup, baguette
-- chicken caesar salad, tomato bruschetta
-- hot dogs or chili dogs, fries
-- fish tacos, slaw
-- spaghetti carbonara, chicken

Cherry clafouti at some point early in the week. Fruit smoothies also on the list.

Mite you are so organized! lots of good stuff too. no me lol haven't done any major cooking..chinese takeout tuesday, smokies w tater tots one day, last night rest of them w salad kit. hotdog for dd. friday no cooking, tonight need to use the garlic bread loave I got so tortellini w it. made mrs smith apple pie last night.
realized had smokie leftovers so that was another night lol well dh loves smokies. and we had the buns to use up.

not sure what is for dinner this week. plenty of options in the freezer. thinking of getting indian takeout.

Mite- I love to see your menus and the ethnic flair. I believe you mentioned being gluten free? We have a member who must not have a drop of gluten and your recipes give me great ideas for dinners/desserts. I read that rye/barley/wheat are full of gluten and she said that some oats have gluten as well....I have not read that but I'll take her word for it.

For the next few days, our menu will be:
Sat- baked butter mushroom chicken, pull apart bacon cheesy bread
Sun- Mother's Day brunch
Mon- Pizza, chicken nuggets, oven fries
Tues- King Ranch chicken, rice

I read that rye/barley/wheat are full of gluten and she said that some oats have gluten as well....I have not read that but I'll take her word for it.
I would like to explain this a bit:
Oats are gluten free BUT they are - at least here in Europe - harvested and processed using the same machinery that is used to harvest and process wheat, barley, rye. So the machines are contaminated with gluten. This is how the gluten gets into the oats. This oat is therefore not edible for people with celiac disease.
There are also oats that are labeled gluten-free. It really is gluten free. Nevertheless, the German Celiac Society recommends eating only a little of the oats. In some people with celiac disease, the gut reacts unfavorably to it. It is not yet known why this is so.
I don't eat oats. There are plenty of other foods.
