I’m embarking on using up some old stuff in the freezer. Today I’m baking my low fat cinnamon bun recipe that has pumpkin purée in it. The pumpkin has been in the freezer at least a year!

This next week’s menu:

Tonight: Salmon Teriyaki and rice with frozen green beans
Saturday: pork tenderloin, roasted root vegetables
Sunday : leftovers
Monday: lentil soup, scones and topping
Tuesday: leftovers
Wednesday: Maple Balsamic chicken drumsticks, rice, frozen vegetables
Thursday: leftovers

Changed a few things this week due to leftovers and weather, so a few meals got bumped to next week. End of Feb temps are expected to be mild, but anything can happen this time of the year.

-- miso chicken, asparagus
-- tacos, l/o corn chips, veg/salad?
-- cauliflower soup, salad
-- pasta, meatballs, broccoli, garlic bread
-- chicken and creamed corn chowder
-- salmon rice bowl, mushrooms, edamame
-- pork chops, butternut squash

Then I am out of fresh veg, but for March we have:

-- burgers
-- chicken curry, rice, frozen vegs
-- kielbasa, potatoes, carrots
-- fish sandwich
-- l/o pot roast dinner
-- chili, cornbread

This week I want to try Spaghetti Carbonara, have bacon that was free w/ grocery points. Put some extra aside for quiche later in the week. Got mark-down french rolls to continue practicing garlic bread.
At the store I noticed Safeway had value brand refrigerated biscuit dough for under $1.50. That might be good for some sort of casserole topping. Did not buy it this time but maybe next trip. I can make my own biscuits but it's always a mess to clean up after.

Yes we don't eat it often but Little Caesars is good but out of the way for us. Dominos at the corner is so much handier lol well now that I think of it 3 pizza places in a few blocks here. Another maybe here for dinner or not and no idea for the week. cooked the lb of hamburger w mexican seasonings so that is there. still shepards pie and plain pasta that can be doctored up. also hard boiled eggs. plus black forest ham lunchmeat to use up.

dh came home w frozen pizza last night so that is what we had. dd and I had pasta friday night. other outs. made chicken soup from roasted chicken leftovers so that was one day. plus dh and i went to dennys for meah meal. but he is happy now. popeyes keeps advertising a flounder sandwich that I want to try...and is walking distance lol easy to twist dh arm to go get it cus he loves their chicken sandwiches. one of the few places that uses real chicken not ground up patties.

I may freeze the shepards pie again in ind servings. will see. the big tub of yogurt is going off too. thinking of using the eggs in a curry for ds and me.

DLRCPA I’ve never had spaghetti carbonara. If it’s got bacon though it must be good! The refrigerated (or even frozen) biscuits do make good casserole toppings. You can use them to top pot pies as well. Another thing I like to do is use the biscuits to make breakfast sandwiches. We like bacon, egg and cheese on them. I freeze them individually and then we can just pull a couple out and microwave them. So good!

CH pot roast is one of my absolutely favorite meals.

Spaghetti Carbonara is so good. but eggs so eat out stuff when I can get it properly. well looked at all the odds and ends of leftovers beef onion gravy penne pasta and the kinda taco meat and threw it all together in one pot w some paprika and a can of mushrooms. the sour cream is still good so some of that too. mock strognaff works.

ds was going to eat the whole lb of taco meat late last night but no way mister. teen boys ... bottomless.

stopped by safeway w friend and got some marked down boneless chicken thighs so that is dinner in some format tomorrow.

I managed to get my menu made but not posted, and the groceries bought. But then my cat died, and everything fell apart. I was in a slump for about a week and a half and am just now feeling better. We allowed ourselves to splurge a little bit. But in the past three weeks, I did manage to make my quiche and get the borscht eaten, and I made the other things on my meal plan, concluding tonight with chili and cornbread.

I have a couple of ideas for the next meal plan, and maybe I'll work on that tonight.

ended up throwing all leftovers pasta, taco meat etc into a pot w can of mushrooms for strognaoff type meal

chicken thighs, pea/carrots and fries

made tacos last night dh request
tonight .. leftover tacos so whatever they want to make. ds ate all other leftovers.

Hard to believe winter is nearly over. Some events this week will have us out a couple of nights.
