Well, dear sis and brother-in-law are on their way…with a cooler full of leftovers. Curry chicken, lots of fresh fruit, salad fixings and a gigantic half apple pie from Costco.

Hubby is off buying ice cream for the pie, and margarine and bananas because we’re almost out. He phoned from the store lamenting the fact the produce section of the store was cleaned out! There were no bananas and not much else! I think it’s because it’s the end of the weekend. Plus we’re supposed to get snow early tomorrow morning.

nice Mit! what is orange date salad? ended up buying stuff at the store that I didn't plan on so mixed bag of food so people eating diff things. and ds not home in time a lot. have been eating late lunches so not much dinner.

friday open face grill cheese for dd and me corndogs for ds and dh.
arbys late lunch and corndogs for dh and me..finished off the tillamook ice cream.
tortenilli w sauce and meatballs and garlic bread.

still corn soup from mom to eat too. never did the pizzas so maybe tomorrow. not motivated for cooking.

My menu planning has been tossed out the window. DSis brought two coolers of food. We’re eating very well, and will have a lot of leftovers. As soon as they leave tomorrow I’ll make up some freezer meals. We just don’t need so much food! DSis doesn’t plan ahead, so it’s a lot of last minute meal prep. Meaning not very efficient use of food. No time to think.

RedSpruce that’s great your sister and brother in law brought all that food with them. Expenses do add up really quickly when you’re hosting guests so it’s good they contributed. I’ve had a week here and there where I have just not pulled a meal plan together and did a lot of the last minute meal choice and prep. As you noted it’s not very efficient and in my case a lot gets wasted. How far away does your sister live? I’m glad you got to spend some time with her. My sister lives not too far (20 minutes) from me sand I love our chats. If you’d have told me that when we were children I’d have said that would NEVER happen. Mom always said my sister would be my best friend and iI’ll be darned - she was right.

Marthamfi you mentioned Tillamook ice cream! When we first when to visit our friends in Washington state we had Tillamook cheese. It was amazing cheese, just loved it. The stores didn’t carry it here. Vermont cheeses etc are bigger here. About a year ago we got Tillamook ice cream and about six months after that we got the cheese. I was thrilled! It’s so very good. Love the stuff.

@hikr00 I really appreciate the food, but it’s usually food that we aren’t supposed to eat - high fat, salt and sugar content. I put on a couple of pounds a day eating it! Good thing they didn’t stay too long.

Turns out I’m not getting the chance to turn any of it into freezer meals. Hubby finished the curry for lunch and the roast chicken will be finished tonight and tomorrow for lunch. Thankfully they took the sweets with them when they left! Plus the bran muffins I made yesterday.

They did leave one lone piece of baklava. I ate it. It was gross. it was made with liquid sugar instead of honey. How to take a great dessert and ruin it, imho. 😔

They left strawberries too, and some apples and sour oranges. But DSis took most of the apples because I told her I wasn’t going to make an apple crisp. We already have extra fixings for strawberry shortcake in the house.

I told her to go down to my canning cupboard and take some stuff. She was excited to find unsweetened applesauce and marmalade there. That’s all she took. Hubby was with her. I was really hoping she’d take a bit more. We’re loaded until next harvest.

At any rate, they are gone and tonight’s supper is roast chicken leftovers with strawberry shortcake for dessert…for those who want it.

Tonight was frozen leftover dinners. Turkey/beef sweet and sour meatballs, brown rice and California vegetables. Back on schedule tomorrow.

Thursday - Spinach quiche & Garlic bread
Friday - leftovers
Saturday - salmon chowder
Sunday - leftovers
Monday - Turkey burgers
Tuesday - leftovers
Wednesday - BBQ Pork ribs, rice, veggies
Thursday - leftovers

Weekend is going to get busy, so here is next week's plan.

-- leftovers or pot pie
-- l/o pot roast dinner
-- mac&cheese with ham, salad
-- miso chicken thighs, butternut
-- tilapia (maybe fish tacos), salad
-- boiled dinner, popovers
-- chicken, vegs

Yes the Tilllamook cheese is really good. I get it if cheap enough in the states. was the first time for the ice cream yum. Don't think I have had any Vermont cheese unless they sell it at speciality store though heard it is good.

still hit and miss dinners. that classico sauce w pasta and meatballs ..crows and teen son finished that today. the blueberry crumble leftovers too.

corn soup, leftovers, burgers takeout and tonight takeout pizza from the family place we haven't had for a long time. and if people wanted something different

not sure what is coming up except that peas need using up and half done soup needs finishing.

@miteigenenhaenden you are so organized to pull a whole month together! Nicely done. What is “heaven and earth” that is being served with the trout? I’m intrigued.

Hi everyone,

I just came back after some very hectic weeks at work. I managed to make another meal plan and get almost all the way through it, although I skipped some days because I've been feeling exhausted. I can't wait to be able to quit one of my two jobs, but I have some debts to pay off first and a big vacation that we'll be taking next year.

I have fish on the menu for tonight, along with some sweet potatoes and either greens of some type or broccoli. Hopefully I'm up for cooking. I need to be eating healthy and regaining some stamina.

I diligently made my monthly menu before March 1st, but was too busy/uninspired to actually post it... BUT we have been trodding along with it well enough with minimal tweaks. I have been off for a couple of days, and it has been LOVELY, but I go back to work Wednesday night, so the plan has to include things for when I am working that are either crockpot, heat-and-eat, or so-easy-a-toddler-can-do-it (and even then, the teens and H will try to order delivery instead...) Anyway, here is the rest of the month, any night that a veggie is not listed (most of them), we will have salad and celery/carrots if people want them. Stars are nights I am working.

13- Chicken noodle soup
14- Personal pizzas
*15- Salisbury steak, asparagus, mashed potatoes
*16- Bean soup
*17- Corned Beef and Cabbage
18- chicken stir fry w/rice
19- Bbq chicken, creamy cucumbers
20- Ravioli, spinach

24- cheesesteaks
25- breakfast-for-dinner (waffles, and?)
26- Street tacos
27- greek chicken kabobs, hummus (tabbouleh?)
*28- Cabbage rolls (make ahead)

*31- loaded fries

Looking at this, I just realized I will be working on April fools' day... need to find something fun for that night...I'll definitely do the veggie-tray-in-a-donut-box for work...

Happy Birthday to your hubby Red Spruce! Why do I remember what we ate and then forget as soon as I plan to write....sigh. still not plannning more then a day at a time. Do need to get some groceries like milk and dry cat food. though moldy bread etc so crows and seagulls happy.

did make the 2 soups white/chicken and pea soup so fed some of the people. dh doesn't touch any peas. so leftovers or hotdogs too. more takeout pizza friday.

sunday perogies w onions and bacon
mon wedge fries w precooked ribs and peas.
tues found marked down tagine middle east sauce in the cupboard so since dd wasn't home for dinner.. made it w stirfry pork, peppers that needed using and some leeks and rice.

not sure but defrosting some marinated chicken breasts I got marked down and froze. so maybe wraps?

Hm, have some bacon to use up - homemade bacon pizza? Good thing about pizza is you can put different toppings on each half, make mine mostly veggie and throw all the bacon to one side for hubby's cholesterol.
Got HUGE chicken breasts (from the giant chicken farm apparently) at Safeway Monday and hubby made fajitas last night, very proud of himself. He always fishes for compliments when he cooks. :rolleyes:

DLRCPA pizza is always a win. Dh and our youngest DGD love bacon pizza. My first love is pepperoni on a pizza but bacon is pretty good too. I chuckled at your dh - if mine does anything he will break his arm patting himself on the back and will call attention to what he’s done so I can be sure to acknowledge his efforts. LOL. Men, gotta love them.

Marthamfi marinated chicken breasts would make good wraps. Or even just baked is good. I love chicken as it’s so versatile. I’ve got grilled pineapple chicken and Monterey chicken both on the menu for this week. Two different tastes but both made with chicken.

I’ve got Mongolian beef in the crock pot for tonight. I’ve never made it before so i hope it’s good. It’s kind of funny because I chose this recipe for dh. There was a Chinese buffet he and dd used to go to that had a Mongolian food section and he raved about it. The chef left and that part is no longer there. I know how much he missed the food so I decided I’d give this a whirl. He asked what I was fixing this morning and I told him. He said “I’ve never had that, are you sure it’s good”. No sweetie, I have no idea if it’s good. I don’t like Mongolian food. Somewhere we crossed our wires so I have no idea how dinner is going to go tonight! Lolol. 😂

I haven't done a meal plan in so long. Here's a list of things I will most likely cook next week.

Corned beef/cabage (I'll just eat the cabbage and I'll probably have some carrots and potatoes too, or some spaghetti from the freezer) I don't like corned beef
garlic chicken and zucchini
steak bites and mushrooms
pork tenderloin with mushrooms

There will be enough for dh to have lunches also. He eats his big meal for lunch. I need to eat better at home, so here's the plan.

Tonight was sloppy joes using a modified version of this recipe.

Sloppy Joes

I had dried morels from one of my sisters. I reconstituted them for the mushroom component.

I used a yellow pepper going bad instead of red pepper. Just cut off the bad parts, minced it, and in it went. Same for the carrot.

There was a leftover 2/3 large onion in the fridge. I minced that up for the 1 medium onion.

I used my hm tomato sauce with Costco tomato paste. I am freezing the rest of the tomato paste in an ice cube tray.

I used some frozen minced garlic from the other day, from when I peeled all my garlic and minced it in the food processor with olive oil. I froze it in small amounts roughly equal to two cloves. They are now in a zippered bag in my freezer.

The recipe called for steak spice and I didn’t have any, so I squirted in a generous glog of steak sauce. I wasn’t worried about salt because there was a tablespoon of Worcestershire sauce in the recipe!

Anyways, it was interesting sloppy joes. We both enjoyed them on leftover ww kaiser buns leftover from when we had the turkey burgers.
