3 Meal Roast Beef


Recipe Description
I just made this during the week...and it's a very frugal dish that remakes leftovers easily.​
Preparation Steps:
The First Meal is a beef roast sliced, with any type of potato you prefer. I also served a salad with this.

2nd meal is beef enchalada's. This is a little more time consuming...but filling.

3rd meal is homemade beef veggie soup.​

3 days??​
Ingredients:
1 Beef chuck Roast(LARGE)
2 Large onions
1 can Rotel(onions w/diced chili's)
1 Envelope dried onion soup mix

8 oz. shredded cheddar cheese
8 soft taco shells
1 can FF refried beans
1 can enchalada sauce

4 potatoes
1 bag frozen green beans
1 bag frozen corn
1/4 c. barley
1 large box beef broth​
Serves:
4-6 per meal​
Directions:
Meal ONE:
Put Large Chuck Roast in baking pan with 2 whole onions, dried soup and Rotel. Bake 3-4 hrs on 350. Serve slices with noodles or mashed potatoes & salad. Strain broth in pan..and put in refridgerator along with leftover beef.

MEAL TWO:
rewarm beef in microwave. Shred this. Put refried beans in bowl..warm in microwave. warm The soft taco shells and assemble in the following order: Taco shell, spoonful of beans spread out...spoonful of shredded beef and sprinkle with a little shredded cheddar cheese. Put a dab of sauce on this..and roll up and put in 13 x 9 pan. Spoon rest of sauce and cheese on this..and bake at 325 for 30-35 minutes.

MEAL THREE:

dice Potatoes, dice rest of beef. Put reserved broth in pan along with couple cans (or large box)of beef broth. Add potatoes, beef, corn, barley and green beans. Add dash of ketchup...some black pepper and garlic powder. Simmer until potatoes are done.

3 meals...just add the sides you prefer.​
