Just a suggestion, instead of using bags of shredded cheese, buy blocks of cheese and shred them yourself. They freeze really well shredded and it is easy to just take a little out of a bag if you only need a small amount. Bags of shredded cheese do not freeze well and they are full of ingredients you can't pronounce. Block cheese only has, I think, four ingredients and it tastes better.
My experience is different. I freeze shredded cheese all the time and haven't had any issues with it. The brands I buy are real cheese with a little vegetable starch to prevent caking. It has to be thawed overnight in the fridge before using, but after that it is fine. I get it when it goes on sale for 99c a bag and really stock up on it.
That's great that you are able to find good shredded cheese, especially for 99 cents! I used to buy Kraft or the Meijer/Kroger brand and it all had a ton of weird ingredients in it so I stopped buying it and it was never 99 cents! Even on sale.
