I love this meal and so does the whole family, so I can get away with a vegetarian meal for all of them and they don't even realize it. ;)

Baked Potato with Vegetarian Chili

Enough baked potatoes for you or your whole family
Vegetarian Chili (I purchase mine at the grocery store - its yummie)
Sprinkle of Parsley or cut up green onions
Dab of butter

Bake potatoes until done. Slice open and place a small amount of butter. Cover with chili. Sprinkle on parsley or green onions.
Serve hot!!

I like to serve this with a nice tossed salad and a slice of freshly made whole wheat bread.

Enjoy!!

Heather, the vegetarian chili is in a can and I've found it at Superstore. Its in the canned bean or canned chili section (at least thats where I've found it). Its not that expensive and I find it tastes delicious.

You can always make your own vegetarian chili (which I have done) but because I used tomatoes in my chili, its a bit juicy to put on the potato.

What a great idea - I'm always looking for quick but healthy meals for the kids and I for evenings when I have to work late (we're vegetarians too) - thanks for sharing!:tom:
