Anyone have a Beef and Noodles recipe???

I'm looking for a Beef and Noodles recipe. We had a chuck roast in the crock pot tonight for supper and I would like to use the left over roast for Beef and Noodles tomorrow night.

I would even like to attempt to make home made noodles, but for some reason I can't get myself to just jump in and give them a try. Everyone says they are so easy, but I don't know what kind of consistency to look for.

Oh how I wish I had a cooking/baking mentor. :)

THANKS in advance.

When you roll dough for noodles you want it to be somewhat dry and almost leathery.

But noodles are so cheap even I can't bring myself to make them.

I make a gravy with onions and mushrooms, half a cup of marsala wine, cream and some beef stock. Add leftover roast, and serve over noodles.

I just buy egg noodles and prepare.
I cut cooked stewing beef, pepper, canned beef gravy, salt and a lg. dollup of sour creme. Then I dump it on noodles. I would also put mushrooms but DH ain't havin' any fungus on his food.lol. Men!!
I make beef noodle soup...pretty much the same way I make chicken soup, except I use beef broth.
I prefer homemade noodles when it comes to beef and noodles. If I can find the recipe, I'll try to post it tomorrow.
I use mine for beef stroganoff - basically the same recipe as Contrary Housewife posted.
THANKS for the responses. As someone mentioned, I just used a Chicken and Noodle recipe and used beef and beef boullion instead. DUH!!! I don't know why I didn't think of that!!!

We had it tonight for supper and it turned out great. I cheated and used some frozen noodles I had. I chickened out, again, on making home made. Someday.

THANKS again!!!!
