Apple Cranberry Nut Bread


1 medium baking apple, peeled, cored, and cut into small chunks
1 cup fresh cranberries
2 cups all-purpose flour
1 cup sugar
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. apple pie spice
1/2 cup orange juice
1/2 cup oil
1 egg
1 tsp. grated orange zest
1 tsp. vanilla extract
1 cup chopped pecans


Preheat oven to 350* and grease a loaf pan. Process the apples and cranberries in a food processor until coarsely chopped. Combine the flour, sugar, salt, baking powder, baking soda, and apple pie spice; set aside. Combine the orange juice, oil, egg, orange zest, and vanilla. Combine the orange juice mixture with the processed apples and cranberries; stir in the chopped pecans. Combine with the flour mixture until well blended. Spoon the batter into the prepared loaf pan and bake 50 to 55 minutes or until done. Cool in the pan for 10 minutes before removing to cool completely.

This sounds delicious. I'm going to go and rummage through my freezer to see if I have any cranberries hiding out behind the blueberries!:D
