Apple Muffin Mix
8 cups all-purpose flour
2/3 cup sugar
1/3 cup baking powder
1 T. salt
1 cup vegetable shortening
In a large bowl, combine the first 4 ingredients and mix well. Cut in the shortening with a pastry blender until evenly distributed. Store in an airtight container in a cool dry place for up to 10 weeks. Give with instructions.
To prepare: Combine 2 1/3 cups of muffin mix with 1/2 cup chopped nuts, 1/4 tsp. cloves, 1 cup sweetened applesauce, 1/4 cup milk, and 1 egg (beaten). Stir just until moistened; batter should be lumpy. Butter muffin tins and fill each cup 2/3 full with batter. Bake at 400 degrees for 15 to 20 minutes or until golden brown. Makes 1 dozen.
Makes about 10 cups of mix.
