Apricot Brown Betty

2 cups breadcrumbs -- or graham cracker crumbs
4 Tablespoons butter -- melted
1/2 cup dark brown sugar -- gently packed
1 teaspoon cinnamon
grated rind and juice of 1 lemon
2 cups stewed apricots -- well drained & water saved
1/2 cup drained apricot water
soft butter -- optional

In a mixing bowl, use fork to toss together the crumbs and butter.

Add the sugar, cinnamon, grated lemon rind, and lemon juice, tossing as before.

In a buttered baking dish, arrange a layer of the crumbs and then a layer of apples; repeat saving a layer of crumbs as topping.
Sprinkle water over the mixture.
Dot with butter.
Bake the Brown Betty at 350 degrees for 40 minutes, or until the apples are tender.
If the dessert browns too rapidly, cover it, remove the cover later to brown the top.
Serve the dessert hot with cream.
