One of my favorite side dishes with a good grilled chicken breast or steak.

1/2 lb baby bok choy
4 or 5 strips of bacon
crushed red pepper flakes
salt & pepper

Heat a pan on medium heat

While pan is heating chop and trim bok choy to bite size peices

Cook bacon until crispy, then drain the bacon grease but leave 1 - 2 tablespoon of grease in the pan to cook the bok choy.

Turn heat to medium low, add bok choy to pan and cook until wilted, stir often.

While bok choy is cooking chop the bacon to small pieces

Transfer bok choy to a large bowl, add chopped bacon, pepper flakes, and salt and pepper to taste and toss.
