Banana Breakfast Bars


Recipe Description
You can use pecans instead of walnuts and dried cranberries instead of raisins.

Frugal using ripe bananas!!​
Preparation Steps:
Level of Difficulty:
Easy​
Time Needed:
about 45 minutes​
Ingredients:
3/4 cup sweet unsalted butter, softened
1/2 cup brown sugar
1 egg
4 cups quick oats
2-3 ripe bananas, mashed
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup chopped walnuts or chopped pecans
1/2 cup golden raisin​
Serves:
about 20​
Directions:
Cream the butter & sugar together then add the egg.

Stir in the oats, bananas, salt, & cinnamon.

Mix in the nuts & raisins (if using).

Spread the mixture in a greased 9x13 pan then bake for 30-35 minutes on 350 degrees.

Cool in the pan then cut into bars.​

I made these yesterday but tweaked a bit as kiddo is in braces and can't do dried fruit or nuts. I was almost out of butter so I used 3/4 c peanut butter instead of butter and omitted the nuts or raisins.

They were great!!! Very filling. I can see a lot of possibilities with this recipe. Thanks!
