Had a request from another forum to post this recipe. I have not made it yet but intend to do it in next couple of days. Thought it sounded good (I love the 'butters') and it was in an OLD canning book I had.

BANANA-PECAN BUTTER makes 8 half-pints

3 cups mashed ripe bananas (6 to 7 medium)
1 teaspoon grated lemon peel
1/4 cup lemon juice
6 1/2 cups sugar
1/2 teaspoon butter or margarine
6 ounces liquid fruit pectin
1 cup pecans, chopped fine

1. Combine bananas, lemon peel, lemon juice, sugar, and butter in large heavy saucepan; blend thoroughly.

2. Bring to boiling and boil 2 minutes, stirring constantly to prevent sticking.

3. Remove from heat; stir in pectin and chopped pecans.
Ladle into clean, hot jars and seal.

4. Process in boiling water bath for 10 minutes.

Oh that sounds so good. How would you serve this though? I'd love to give it a try.

I plan to use it the same way I would use any of the other jams/butters.......like apple butter, for instance. Should be excellent on toasted muffins.......we'll see!

Got it made today.

Lo and behold I found another recipe on the sheet inside the powdered pectin. It called for less sugar(4 cups white & 1/2 cup brown) and some spices,(cinnamon and nutmeg) which I thought might be needed. So I combined the items from the two recipes........the flavor is great!!! I would definitely make this again. (and if I didn't have pecans, would use walnuts)

Gees.........now should I post the 'altered' recipe?

adjusted recipe

Here is what I actually ended up using....turned out TASTY!! Plan on making more....soon. (probably using walnuts or unsalted dry roasted peanuts)

I did it this way and used powdered pectin.....

3 cups mashed bananas - was the same in both recipes
1 teasp grated lemon peel
1 1/2 teasp. cinnamon - added from original post
1/4 teasp. nutmeg - added from orig. post
1/2 teasp. butter or marg
4 cups granulated sugar - measure and put in another bowl
1/2 cup brown sugar - measure and add to granulated in bowl
'slim' 1/4 cup lemon juice
1 box powdered fruit pectin - orig. called for liquid pectin
1 cup chopped pecans (one cup WHEN chopped) I heaped it.

Combine bananas, pectin, lemon juice, lemon peel, cinn., nutmeg, butter in saucepan and bring to full rolling boil. Stirring constantly.

When boiling, stir in sugar and nuts quickly and bring to boil again. Boil for 1 minute.
Put in jars, seal. Give a 10 minute boiling water bath.

Now it is a tried and tested recipe! Any ?'s pm me or post.
