I'll be posting some banana recipes, please add yours too.



BANANAS WITH RICE*

Cook half a cup of washed rice in a cup and a half of milk and half a teaspoonful of salt until tender; add an egg beaten light, a
tablespoonful of butter, and one-fourth a cup of orange marmalade (cut the orange peel very fine).
Let cook until the egg is set.
Turn into a bowl, buttered and sprinkled with sugar, and make smooth on the top.
Set the bowl on several folds of paper in a baking dish and surround it with boiling water.
Let cook in the oven about fifteen minutes.
Meanwhile sift together a cup of sugar and four level teaspoonfuls of cornstarch, add one cup of boiling water, and let cook ten or fifteen minutes.
Add a teaspoonful of
butter and pour over four or five bananas, peeled, and cut in slices.
Let stand on the stove about five minutes.
Flavor with a half teaspoonful of orange or vanilla extract. Unmold the
rice on a serving dish and pour the bananas and sauce around it.

Makes 4-6 servings

SCALLOPED BANANAS*

INGREDIENTS

5 BANANAS
1/4 cup sugar
1-1/2 cups stale cake crumbs
1 cup marshmallows, cut in cubes
1 tablespoon butter
1/2 cup milk

Remove the peel of the bananas and cut in 1/4-inch slices.

Put a layer of bananas in a greased casserole and sprinkle with
sugar.
Add a layer of cake crumbs and marshmallows. Then add alternate layers of bananas, cake crumbs and marshmallows and repeat process until all the ingredients are used, having a layer of cake crumbs on top.
Dot with butter. Pour the milk over it.

Bake in a hot oven (400 degrees F.) 20 minutes.
Serve hot with Lemon Sauce.

Lemon Sauce

2 tablespoons lemon juice
1/2 cup sugar
1 tablespoon flour
1 cup boiling water
1/4 teaspoon salt
1 egg yolk
1 tablespoon butter
1
Mix sugar, flour and salt.
Add the boiling water and cook until thick, stirring
constantly.
Remove from heat and pour over the beaten egg yolk.
Add butter and lemon juice. Mix well.
Serve hot.

Makes 6-8 servings

BUSY DAY STIR-FRY*

2 tablespoons vegetable oil
1 cup chopped onion
1 large chopped green pepper, seedless
1 lb. ground beef
16 oz. canned whole tomatoes, drained and chopped
1/2 teaspoon ground cinnamon
1/2 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
3 bananas, cut in 1-inch slices
In large skillet, heat oil; add onion and green pepper. Stir
frequently, about 5 minutes, until vegetables are crisp-tender.

Remove vegetables, set aside. In same skillet, brown meat,
breaking up as it cooks. Add tomatoes, cinnamon, chili powder, salt and pepper.
Simmer 5 minutes.

Return vegetables to meat mixtures, add bananas; mix gently.
Cook 2 minutes or until heated through.
To serve, garnish with corn chips.

Makes 4 SERVINGS

BAKED BANANA DOUGHNUTS*

1-1/3 cups sifted all-purpose flour
2 teaspoons baking pawder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/3 cup sugar
6 tablespoons cold butter or margarine
1 egg
1/2 cup mashed ripe banaaas (1 large or 2 medium bananas)

Sift together flour, baking powder, baking soda, salt and
nutmeg; stir in sugar. Cut in butter until mixture resembles coarse meal.
Beat egg with mashed bananas; add to dry ingredients and mix
well. Cover and chill about 2 hours. (Dough will be soft.)
Turn out onto lightly floured board, roll out 1/2 to 3/4-inch
thick.

Cut with a floured 2-1/2-inch doughnut cutter, or trace with a knife, cutting out centers.
Place 1/2-inch apart on greased baking sheet.
Bake in 400 F. oven 10 minutes or until lightly browned. Cool slightly, frost while warm with Banana Glaze**.

Makes 10 doughnuts and holes

**Banana Glaze: Mix 2 tablespoons mashed bananas and 1/3 cup sifted confectioners' sugar. Dip warm doughnuts into glaze, swirling to coat tops.

Note: The doughnuts are best when served warm. Roll out and cut doughnuts.
Refrigerate on cookie sheet until about twenty minutes before serving time; bake as above.

BANANA-APPLESAUCE*

A variation from the usual applesauce that accompanies duck or pork
2 apples
4 bananas
1/2 cup water
1 small stick cinnamon
1/3 cup sugar

Pare apples and bananas and cut in small pieces.
Add water and cinnamon, and cook until soft.
Take out cinnamon, rub through a sieve and add sugar.
Makes 6 servings

SKILLET BANANAS*

3 tablespoons butter or margarine
1-1/2 teaspoons lime juice
Pinch nutmeg
Pinch salt
4 medium bananas, cut in half crosswise
1/4 cup dark rum

In large skillet melt butter; stir in lime juice, nutmeg and salt.
Add bananas; turn to coat with butter mixture. Cook 2 minutes.
Add rum. Baste bananas with butter-rum sauce.

Serve immediately.

CURRIED CHICKEN THIGHS WITH BANANAS*

8 skinless chicken thighs
1-1/2 teaspoon salt
2 tablespoon butter
1 sliced onion
2 teaspoon curry powder
1/8 teaspoon ginger
1 tablespoon lemon juice
1/8 teaspoon pepper
1 tablespoon flour
1 apple, cored and diced
1 green pepper, cut in strips
2 bananas

Sprinkle chicken thighs with 1/2 teaspoon salt. In large
skillet, melt butter. Add chicken thighs, brown on both sides, and remove.
Add onion, curry powder, ginger, lemon juice, remaining 1
teaspoon salt and pepper - cook for 5 minutes.
Sprinkle flour over onion mixture and toss to mix well. Return
chicken thighs to skillet. Cover and cook 15 minutes.
Add apple and green pepper, cover and cook 15 minutes longer, until chicken is tender.
Peel bananas, cut into diagonal slices, add to skillet and cook 5 minutes.

Makes 4 servings

BURNT SUGAR AND BANANA PIE*

2 ripe BANANAS
2 egg whites
2 egg yolks
1/2 teaspoon salt
1/2 cup sugar
1/2 cup flour
1-1/2 cups milk
6 tablespoonfuls sugar
1/2 teaspoon baking powder
1-1/2 teaspoons vanilla
pastry for pie shell
Line a medium sized pie plate with pastry having a fluted edge and bake at 500 degrees F. for 12 minutes; meanwhile prepare the following filling;
Scald one cupful of milk in the top of a double boiler and add one-fourth cupful of sugar which has been caramelized. Cook until the caramel is dissolved.

Place the flour in a measuring cup, add enough milk to make a smooth paste and then fill up the cup with milk.
Beat the egg yolks slightly and add one-fourth cupful of sugar, the salt and flour paste.
Pour the scalded milk gradually over this mixture, stirring constantly.
Return to the double boiler and cook for one-half hour.
Remove, cool and add one teaspoon of vanilla. Pour into the pastry shell and garnish the top with bananas cut in rings. Cover with a meringue as follows; Beat the two egg whites until stiff, adding four tablespoonfuls of sugar.
Add the remaining two tablespoonfuls of sugar, the baking powder, and one-half teaspoonful of vanilla, beat well, and pile lightly on the pie.
Brown in the oven at 300 degrees F. for fifteen minutes.

Makes1- 9" pie

BANANA OMELET*

4 eggs
pinch of salt
1/4 cup milk or hot water
2 ripe BANANAS
4 teaspoons butter
1 tablespoon powdered sugar
1 teaspoon lemon juice

Separate the eggs. Beat yolks with salt, sugar and milk until
foamy.
Beat whites stiff and fold into yolks.
Slice two bananas and fry in omelet pan four minutes, and then
pour in the omelet.
Cook slowly until done, and serve immediately.

Makes 4 servings

BANANA CROQUETTES*

Remove peels from firm bananas, and cut in halves crosswise. Then remove a slice from each end (to make croquette shape). Dip in crumbs, egg and crumbs again, fry in deep fat, and drain on brown paper.

Banana Cake

2 1/4 c cake flour
1 1/4 tsp baking powder
1 1/4 tsp baking soda
1 tsp salt
2/3 c shortening
1 2/3 c sugar
2/3 c buttermilk
3 eggs
1 1/2 c mashed ripe bananas (about 4)

Heat oven to 350 degrees. Grease and flour a 13x9x2 baking pan.

Mix dry ingredients together. In another bowl, beat shortening and sugar together until fluffy.
Add eggs, one at a time. Add dry ingredients
alternately with buttermilk. Add bananas. Beat on high for 3
minuntes, scraping bowl.

Pour into pan and bake 45-50 minutes. If baking in a 9" round pans,
bake
35-40 minutes. Cool and frost with Mocha Frosting.

Mocha Frosting

1/3 c butter, softened
1/3 c shortening
1/3 c unsweetened cocoa powder
1/2 tsp vanilla extract
1/4 c strong cold coffee
1 lb confectioners sugar

Beat butter and shortening together until light and fluffy. Add cocoa andvanilla.
Slowly add confectioners sugar along with some of the coffee.
After all the sugar has been added, slowly add remaining coffee until frosting is desired consistency.
