Silly people. :D

Here is a recipe that I posted on another thread and have made it several times. It's very good.

Banana Bread (Andrew Weil, MD)

3 very ripe bananas
1/2 cup honey
3 tablespoons canola oil, plus a little more for oiling the loaf pan
1 tsp. pure vanilla extract
1 1/2 cups whole-wheat pastry flour
1 1/2 tsp. baking soda
1/4 tsp. salt
3/4 cups walnuts or pecans

Heat oven 350. Lightly oil loaf pan.

Mash bananas and mix with honey, canola oil and vanilla extract.

Stir together the whole wheat pastry flour, baking soda and salt. Add nuts. (I'm sure you could leave the nuts out if you wanted too)

Blend the two mixtures and spoon into a lightly oiled loaf pan. Bake for 40 minutes, or until center is set.

Palooka, do you think I can substitute whole white wheat all purpose flour in the recipe?
On the recipe he says whole wheat flour would be too heavy. I know, sometimes I have trouble finding whole wheat pastry flour. I've never tried to substitute it before. :)
