Hey all,

Passing along a recipe from my grandmother's book. She used to make this for us when we were kids and would visit for the weekend in the winter. It's one of my favorites. Instead of using the slow cooker like in this recipe, you can simmer it on the stove for 30 minutes or so, until it's heated through. I haven't tried this in an instant pot yet, looking at doing that this weekend, so i'll update on how that turns out.

2 lb ground meat
1 15oz can Pinto Beans
1 15oz can Kidney Beans
1 15oz can Black Beans
4 or 5 strips of bacon
1 medium onion
3 or 4 cloves garlic
1 pkg taco season
1 pkg ranch dressing mix
2 15oz cans diced tomatoes
1 small can diced chili peppers
1 15 oz can sweet corn
3 medium celery stalks
3 medium carrots
1 bag tortilla chips

Prep the veggies -
Dice the onion
Slice the carrot and celery
Mince the garlic

Add the ground meat and onion to a skill and cook until meat is browned

While the meat is cooking add all other ingredients (except the chips) to your slow cooker and mix well.

when the meat is done add it to the slow cooker and mix well. Cook for 6 to 8 hours.

Serve with the tortilla chips

I like using a pound of ground beef and a pound of mild or medium Italian sausage for the meat. I use whatever beans are on sale.
