Best Apple Cake Ever!
Recipe Description
A recipe from Cooking Light magazine that'll knock your socks off! The taste and texture are perfect. I have substituted low-fat and regular cream cheese for the fat-free cream cheese as well as used 3 ounces cream cheese and 3 ounces fat-free plain yogurt as a substitute. I'm fairly certain that sour cream would work as well.
Preparation Steps:Spray an 8 inch springform pan with cooking spray.
Allow butter, cream cheese and eggs to sit out 15 minutes before starting.
Peel and chop apples.
Pre-heat oven to 350*.

Ingredients:1 1/2 cups sugar
6 ounces fat-free cream cheese
1/2 cup butter, softened
1 tsp. vanilla
2 eggs
1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
2 tsp cinnamon
1/4 cup sugar
3 cups peeled, chopped apples(3 large apples)
Serves:6 ounces fat-free cream cheese
1/2 cup butter, softened

1/4 tsp salt
2 tsp cinnamon
1/4 cup sugar

Directions:In electric mixer, beat cream cheese, butter, sugar and vanilla at low speed until blended. Add eggs and beat at medium-high speed until airy(about 4 minutes)scraping the bowl several times during beating.
In a separate bowl, blend together flour, salt and baking powder. Add to wet mixture and mix until well combined.
Mix together cinnamon and 1/4 cup sugar. Take 2 TBS of this mixture and stir into chopped apples to coat.
Quickly mix apples into batter with a spoon. Don't over-mix.
Pour batter into prepared pan. Sprinkle with remaining cinnamon sugar mixture.
Bake at 350* for 1 hour 15 minutes. Cool completely in pan on a wire rack before cutting. Refrigerate leftovers.
