I read an old, old thread of Margery's on another board. She talked about browning the meat before you put it in the crockpot.

So, yesterday was my first trial.

I browned pork chops before putting them in the crockpot. Even added some onions as I browned them.

Then crockpotted all day.

They were much more moist and tender! Even DH commented favorably.

So, although it gets an extra pan dirty, it looks like it's worth it!

Oh I'm glad it worked for you. Does for me, everytime.

BTW the brown bits on the pan, I rinse with a little water and kind of scrape them up and off into the water (or wine) and it goes into the crock too for more flavour.
