I canned red potatoes for the first time today. I got 7 quarts but only 6 sealed. So, one of the jars is for dinner. Mashed potatoes!!
I must admit that it was hard work. Washing each potato, peeling them and them washing them again.
I had like 15 pounds and I worked alone. I will do it again.

Has anyone canned potatoes before?
