Cauliflower Cheese Soup


Recipe Description
This recipe can be frozen for OAMC, but I like it so much it usually doesn't last that long ;) Originally seen on recipezaar.​
Preparation Steps:

Ingredients:
3/8 ounce butter
1 large onion, chopped fine
1 large cauliflower, cut in florets
1 potato, diced
3 cups vegetable stock
1 2/3 cups milk
3.5 ounces mature cheddar cheese, diced
salt and pepper​
Serves:
Directions:
Heat butter and saute onion until soft, about 5 minutes. Add cauliflower, potato, stock, and milk.

Bring to boil and simmer for 30 minutes.

Pour in Vitamix and blend until smooth, or use an immersion blender.

Serve garnished with cheese, add salt and pepper to taste.​

This one's a keeper. Thanks so much for sharing. I love cauliflower. Paired with butter and cheese, how can you go wrong?

I'm doing serious low carbing so I'll substitute the potato with TVP (total vegetable protein.) Yum!!!!

Vig, you knew I would ask....will this work with my dried cauli and potoatoes? Would you rehydrate seperately or just throw it all in?

We're on the same wavelength on this one. I'm dehydrating cauliflower tonight and have a bag of potatoes ready to go just so I can try this recipe next! I think it would work awesome with dehydrated foods. :)
