CHICK-PEA AND LEMON SPREAD



1 can chick-peas -- (20 oz.)
1/2 cup lemon juice
2 cloves garlic -- coarsely chopped
1/3 cup tahini -- sesame seed puree*
Salt
White pepper

Drain the chick-peas and reserve the liquid.
In the container of an electric blender, combine the peas, lemon juice and garlic; on medium speed, whirl them until the mixture is smooth.
If necessary, add a little of the reserved liquid.

Add the tahini and continue blending the mixture until it is
homogenous.
Adjust the seasoning, to taste
