Chicken and Beans


Recipe Description

Ingredients:
2 lbs boned chicken
breasts
1 15 oz can white
kidney beans
1 15 oz can diced
tomato
onion, carrots,
celery, garlic
salt and pepper
Italian seasoning
sherry (or broth)​
Serves:
Directions:
1. In a crockpot, mix a 15 oz can of white kidney
beans, 1 cup chopped onion, 2 sliced carrots, 1
stalk slice celery, and 3 cloves minced garlic.
2. Put 2 lbs boneless chicken breasts (leave them
whole) on top. Sprinkle with salt and pepper.
3. Mix together: 1 14-15 oz can diced tomatoes
(DO NOT DRAIN), 1/2 cup cooking sherry (broth
could be substituted), and 1 1/2 tsp of Italian
seasoning (I used oregano and basil). Pour over
chicken.
4. Cook on low until done. The original recipe says
for 7-8 hours. My new crockpot cooks hotter than
my old one...it took about 5 hours for me.​

This sounds delicious--thanks. I'm going to try it later in the week when it's supposed to cool down. :)

You're very observant...I didn't even notice it wasn't stated in the recipe...:crackup:

I don't know if you're supposed to or not, but I read somewhere...no clue where now, that you're always supposed to drain and rinse kidney beans...something about the juice they're canned in...not sure what now, but I always rinse them now. So when I make this, I'm going to...maybe someone else knows...:ponder:
