Chicken Creole
Recipe Description
A super easy recipe from Emeril Lagasse. This is our traditional Mardi Gras dinner.
Preparation Steps:

Time Needed:30 minutes
Ingredients:1 tablespoon olive oil
1 clove garlic, pressed
1 medium onion, thinly sliced
1 stalk celery, thinly sliced
1 bell pepper, minced
2 cans diced tomato
1 bay leaf
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
4 boneless skinless chicken breast, cut into 1" cubes

Directions:1. In a large skillet, heat the oil over medium heat. Add the garlic, onion, celery and bell pepper. Cook, stirring occasionally, until tender (about 4 minutes). Add the tomatoes, bay leaf, salt and cayenne pepper. Cook this Creole sauce 3 minutes longer, stirring often.
2. Add chicken breast cubes to the pan, cover, and cook for 15-20 minutes until chicken is cooked through.
