Chicken Enchilada Rice Casserole


Recipe Description
Bare bones meal that you can dress up as you have more
money.​
Preparation Steps:
Cook white rice, (I used steamer or can use leftover)
Cook chicken meat (or use leftover as I did)
Open can of enchilada sauce
Open bag of cheese or shred a block of cheese.​
Level of Difficulty:
Easy​
Time Needed:
30 min​
Ingredients:
Cooked white rice, 3 cups
Cooked chicken meat
1 can red enchilada sauce
shredded cheese
optional: mushrooms,
olives, sour cream, salsa​
Serves:
2 or as much as you make​
Directions:
In a 9 in glass pan, pour in the rice and fill bottom evenly.
Put the chicken pieces on top, pour can of enchilada sauce
over all, sprinkle cheese liberally over all.

Bake 350 degrees, 20 min. just to heat through nice and
hot.

Super cheap, and can add the optional ingredients as
money allows. I did not stir it, left it layered and it all
baked up well together.​

Hi again, I made this last night with leftover round steak cut into bite-sized pieces and it was much better than with chicken. My teen almost didn't leave enough for me to bring to lunch!

And a side note, I do not put the "optional sour cream, salsa" in the mixture, I just offer it on the side. But I suppose you could if you wanted to.

It looked so good that I wanted to try it. Didn't have cooked chicken or red enchilada sauce. So I used some beef fajita meat and green enchilada sauce, cut canned green chilies in strips and covered it with cheddar. Wow!! It's definitely a keeper. And when I have chicken and red sauce, I'll make that, too.

We had this last night and it was great. I did add some sliced olives to my side thought. I only made half of the recipe because it is just me and DD and we are not big on eating the same thing several times in one week.

For a easy enchilada sauce I use tomato paste and thin it with water to whatever consistency I want. Then I add packaged taco seasoning to taste. Sometimes I add hot sauce if I want it spicy.
