Chicken Lemon Soup

Ingredients:1 onions, diced finely
1 1/2 carrots, diced finely
1 stalk celery, diced finely
1 teaspoon oil
zest of 1 lemon
1/2 cup long grain rice, uncooked
2 cups boneless skinless chicken breasts, cooked and diced
7 cups chicken broth
1 cup peas, frozen
1 1/2 tablespoons lemon juice
2 tablespoons parsley, fresh ( or 1 tbsp dried)
salt and pepper

Directions:Heat the oil and cook the onion, celery and carrot over medium heat until soft.
Add the lemon zest, rice and broth, bring to a boil, reduce heat and simmer, covered, for about 20 minutes until the veggies are tender.
Add the peas and lemon juice and simmer another 5 minutes. (If using dried parsley, add here).
Pour into bowls and top with chopped parsley.
