Chicken Pot Pie

Recipe Description
Easy peasy chicken pot pie :)
Preparation Steps:
Pre-Heat the oven to 375 degrees Fahrenheit. Place the bottom pie crust in a lightly oiled (cooking spray is fine) 9" pie pan. Poke several holes in the bottom with a fork. Season your chicken to taste and then mix it with the soup, mixed vegetables, potatoes, and milk in a large bowl. Taste the mixture and add seasonings as you prefer. Be careful with the salt because the soup will likely be salty as it is! Pour the mixture onto the bottom crust and spread it out evenly. Top with remaining crust and seal edge. Poke half a dozen holes in top of crust with fork. Cover top of pie with aluminum foil and place in oven for 35 minutes. Check after 35 minutes and if edges have started to brown remove the foil and bake another 10-20 minutes, or until top crust is lightly browned and crisp.​

1 to 1-1/2 lbs. cooked boneless, skinless chicken breast, diced
2 refrigerated pie crusts (Pillsbury or similar)
1 can condensed cream of chicken soup
1 15 oz. can mixed vegetables
1 15 oz can diced potatoes
1/4 cup milk
salt, pepper, garlic powder to taste​
I use a glass, deep dish pie pan and my cooking time is about 50 min. total. Usually the browning step takes 10-15 minutes. If you use a metal pan, you're cooking time may be closer to 40 minutes.​
