Chocolate Pinwheel Cookies


Recipe Description
Stolen from an October 1993 Gourmet magazine. These are rich and tasty, and visually very appealing!​

Time Needed:
45 minutes (+ min 2 hrs chilling time)​
Ingredients:
1/2 c. unsalted butter, softened
3/4 c. sugar
2 t. vanilla
1 large egg
1 1/2 c. flour
1/2 t. baking powder
1/2 t. salt
1 oz unsweetened chocolate, melted and cooled
2 t. milk​
Serves:
Approx 50 cookies​
Directions:
In the bowl of an electric mixer, cream the butter and sugar with the vanilla until mixture is light and fluffy. Beat in the egg.

In a separate bowl, sift together flour, baking powder, and salt. Beat into dough until combined well.

Transfer half the dough into a plastic bag and chill for approx 1 hour.

Stir chocolate into remaining dough and transfer to a plastic bag to chill for approx 1 hour.

After chilling, transfer plain dough to a sheet of waxed paper and roll out into a 12x10" rectangle.

Repeat with chocolate dough.

Brush vanilla dough with milk and invert chocolate dough onto it.

Roll doughs together in a jelly-roll fashion. Wrap log in waxed paper and chill at least one hour or overnight.

Preheat oven to 375F. Cut log into 1/4" slices and arrange slices 1" apart on lightly buttered baking sheet. Bake approx 12 minutes, or until cookies are golden brown. Transfer to racks and let cool completely.​
