Chocolate Pistachio Swirls

Recipe Description
Beautiful little tri-coloured rounds. They look "tres" chic and difficult, but are actually very easy to make. They also look wonderful on a cookie tray and they freeze nicely!​
Preparation Steps:
Leave butter out to soften
Melt and cool chocolate​

1 hour (+ 30 min chilling)​
3/4 c. butter, softened
1 c. sugar
1/2 t. baking powder
1/4 t. salt
1 egg
1 t. vanilla
2 c. flour
1 oz bittersweet chocolate
1/4 c. finely chopped pistachios
2-3 drops green food colouring​
4 dozen cookies​
Cream butter and sugar together. Beat in baking powder and salt, egg, and vanilla. Stir in flour.

Divide dough into thirds. Stir melted chocolate into one third. Stir pistachios and food colouring into one third. Leave one third plain.

Divide each third into four pieces. On a lightly floured surface, roll each portion into a 1/2" thick rope around 8" long. Place a chocolate, pistachio, and plain rope side by side, twist together. Repeat with remaining ropes. Cover and chill all four twisted ropes approximately 30 minutes.

Preheat oven to 375F. Cut ropes into 1/2" thick slices. Carefully roll slices into balls, blending colours as little as possible. Place 2" apart on an ungreased cookie sheet. Using a glass dipped in sugar, flatten each ball until 1/4" thick. Bake 10 minutes or until edges are lightly browned. Transfer to wire racks to cool.​

You'll really like these. They do require a few more expensive ingredients (pistachios and bittersweet chocolate), but they are really elegant and tasty!

Would love to hear your thoughts when/if you bake any of them!
