Cinnamon Nut Cake


Recipe Description
Delicious moist cake.

I didn't have black walnuts on hand, so I used
almonds, and it got rave reviews :)

*From "Lancaster County Cookbook" by Louise
Stoltzfus and Jan Mast​
Preparation Steps:
Grease baking dish

Crush walnuts​
Level of Difficulty:
Easy​
Time Needed:
Ingredients:
Cake

1 box vanilla cake
mix
1 c. water
1 large package
instant vanilla
pudding mix
4 eggs
1/2 c. cooking oil

Topping:
1 T. cinnamon
1 c. sugar
1 c. crushed black
walnuts​
Serves:
Directions:
1. To prepare cake combine all ingredients and mix
well. Spoon 1/2 of batter into greased 13" x 9"
baking pan.

2. To prepare topping, combine all ingredients.
Spread 1/2 topping over cake batter. Add remaining
batter and then remaining topping.

3. Bake at 350º for 30-35 min. Cool and serve.

I used a glass baking dish and needed to bake it for
the full 35 min.​

This looks really good. I didn't expect the topping to be layered. That's a neat idea. Thanks for sharing. I'll def try this one soon.

Another great one to use up my cake mix stock pile! I just can't use the nuts. Hubby's allergic. Any sustitute ideas out there?

Actually I think it would be just fine w/o the nuts. Because you're crushing them, it blends in with the consistency of the sugar & cinnamon. I couldn't really even taste the almonds--that may not be the case with the black walnuts, but I would definitely make it again and leave out the nuts. My brother is allergic to them too, so if I bring one to his house, I'll make it w/o, and I'm sure it will be just fine. :chef2:
