Cola Beef Roast with Sweet Onion Au Jus

The best au jus sandwich ever!​

about an hour​
4 TB butter
2 Sweet onions cut into 1/4" slices
1 3-4lb beef roast
1 12 oz can cola (not diet)
1/4 cp soy sauce
1 packet dry onion soup mix
1 TB minced garlic​
never measured, but easily enough for a dozen sandwiches​
Heat the butter in a 6 quart or larger pressure cooker over medium-high head. Add the onion slices and cook, stirring until lightly browned on all sides. Place the roast on top of the onions. Add the cola, soy sauce, soup mix, and garlic to the cooker and stire together.

Lock the lid and bring to 15 psi over high head. Immediately reduce the heat to the lowest possible setting to stabilize and maintain pressure. Cook for 30 min.

Removed from the heat and use the natural release method to depressurize. Carefully open the lid after the pressure drops. Removed the road allow to rest for 5 miutes before carving or slicing.

I usually let the roast cool and then put in the frige overnight to firm up and let the fat harden. I then skim off the fat and slice the beef really thin with a meat slicer.

I serve cold or slightly warmed in the au Jus on rolls, with au Jus for dipping.​
